Carter’s Barbecue isn’t just about incredible food. It represents a warm feeling of belonging, fond memories and a way of life passed down through generations.
For Dr Holly Carter, barbecue means long summer evenings in Wichita Falls, Texas. The air thick with the smell of seasoning, smoke, and slow cooked meats, and the sound of laughter drifting across the porch.
As the sun dipped low and the sky turned gold, family gathered around the table as the first slices of brisket were lovingly carved and laid out with care. Holly’s childhood was filled with these moments.
Life in Wichita Falls was both wild and wonderful. Holly remembers roadside fields bursting with blue bonnet blooms each spring, her grandfather stopping to take photos of her and her brother among the flowers, and the sound of coyotes howling as the sun was setting. Life was full of love, and food was always at the center of it.
The recipes are more than instructions on paper. They’re stories in themselves, starting with Holly’s grandparents, adjusted over time but rooted in tradition then passed lovingly through her mother’s hands, and now carried forward by Holly and her brother. Every dish served is a nod to that heritage. This is North Texas barbecue. The real kind. Slow-cooked, deeply flavored, and full of love!

Why is this BBQ so different??

It is cooked on something called an ‘offset’. An offset smoker consists of two chambers: a larger cooking chamber and a smaller firebox chamber attached to the side. This design allows for greater control over temperature and smoke distribution, resulting in tender, juicy, and smoky meats. This is the hardest way to cook barbecue, but it is the only way to achieve an authentic Texas taste.
We own one of the few 500-gallon offsets in the UK. It was handcrafted by Primitive Pits in the USA, shipped to us, and craned into position in May 2025. Our chefs have received
special training in how to cook with these massive smokers, allowing you to experience the true taste of Texas here in the UK.
